It can be difficult to decide on a taxonomy for spices, and much like there is no ‘correct’ recipe for many well known blends (see our Allspice Custom Blends) there really is no correct way to categorise spice.
For our spice blends, it seemed best to categorise, broadly, according to the region where they originate. But we think this is less useful for individual spices as nowadays spices are often cultivated far from their native home.
We therefore decided to categorise according to the taste sensations that our spices deliver, namely: Citrus Spices; Licorice and Aniseed Spices; Sweet Spices; Warm and Earthy Spices; Nutty Spices; Acidic and Fruity Spices; Bitter and Astringent Spices; and Pungent Spices. We hope this makes sense to you too.
